... welcome to the fourth board in my travel series - A Board'ing Pass to food destinations.
This week we are checking in - to Mexico!
Build your own taco boards have become just as popular as charcuterie and cheese boards. Taco boards are colorful, fun and filled with good Mexican food.
So, grab your board'ing pass as we take off for MEXICO!
Maya Riviera!
One of the best trips I took was to the Maya Riviera. It was a last minute decision when my best friend suggested that we join her family on their holiday vacation to the Mayan Riviera.
The trip, which included 4 adults and 5 kids, was so much fun! We relaxed in the sun, did some shopping at the local markets, took in a few excursions during the day and we partied, sang and danced every night.
Of course, the food at the resort was incredible. I had never seen so much food with servings of foods from around the world and of course, traditional Mexican food. The individual buffet stations were colorful with beautiful food presentation on display that always had me wanting to go back for more... even when I felt like I couldn't eat another bite!
Let's create our own taco fiesta!
Putting it together!
Serving: 4 - 6 people
Prep Time: 30 minutes
Total Time: 1 hours
Items you will need for your board:
Meats: lean ground beef
Cheese: shredded cheddar
Bakery: corn taco shells and flour tortilla
Vegetables: tomatoes, red onions, frozen corn, asda peppers, red and yellow bell pepper, jalapeno pepper
Fruit: limes, vine cherry tomatoes,
Dips: salsa, guacamole
Greens & Herbs: cilantro, iceburg lettuce
Preparation:
For your taco & tortilla fiesta board, you will need to prepare the following food items, as well you will be doing some cooking!
Cut the top off your asda pepper and clean out the pepper, keeping the top piece. This will act as a bowl.
Dice a red and yellow bell pepper, then fill them into your asda pepper.
Finely chop a whole red onion. You will be adding it to a few of your food dishes.
Chop your iceberg lettuce.
Let's cook...
Here are my recipes for Mexican corn, black bean, tomato & onions, and my homemade beef taco mix.
Mexican Corn
Ingredients: 1 package of frozen corn, 1/2 cup of red onion chopped, fresh cilantro chopped, 1 tablespoon of olive oil, a quarter of fresh squeeze lime juice, sprinkle of paprika
In a pot, add your frozen corn, fill with water and add salt. Bring to a boil and cook for approximately 3-5 mins. Take off the heat and drain the corn.
Add the corn back into the pot and add your chopped red onion, chopped fresh cilantro and drizzle olive oil to coat the corn, as shown.
Squeeze fresh lime juice over the corn, as shown.
Turn the stove back on to a low heat, mix the items together and cook for another 2 minutes, stirring constantly.
Take the corn off the heat and place a lid on top. Put off to the side.
Prepare the black beans...
Black Bean Recipe
Ingredients: 1 can of black beans, 1/4 of a cup of red onion chopped, minced fresh garlic, 1/2 teaspoon of cumin, 1/2 teaspoon of paprika, 1/2 teaspoon of salt. 1/2 teaspoon of black pepper, 1/4 teaspoon of chili pepper and 2 dried bay leaves.
Place the can of black bean into your saucepan. Do not rinse.
Add your spices and the two dry bay leaves.
Cook on high heat until bubbling, then reduce the heat and cook on low heat for 20 minutes, constantly stirring as it may stick at the bottom of the pot. Do not put on a lid.
At 20 minutes, remove the two bay leaves. Take the saucepan off the heat and put a lid on top. Place off to the side.
Prepare the beef...
Homemade Beef Taco Recipe
Whether I am making a beef taco mix, I always add my own spices. I perfect to not use taco mix packages, however, you can if you wish.
Ingredients: 1lb of lean ground beef, 1/2 cup red onion finely chopped, 2 tablespoons olive oil, 2 garlic minced, 1/2 cup tomato paste, 1/4 cup salsa, 1/2 teaspoon cumin, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon chili pepper, 1/2 teaspoon cayenne pepper, 1/2 teaspoon paprika
In an iron skillet, add your ground beef and cook until brown. Remove any excess water.
Add olive oil, red onions, minced garlic, tomato paste, salsa and spices.
Stir all together and cook for an additional 12 minutes or until fully cooked.
Remove from the heat. The iron skillet will keep the beef hot.
Tomatoes and Onion Topping
Ingredients: 10 cherry tomatoes quartered, 1/2 cup finely chopped red onion, 1 tablespoon olive oil, salt and pepper to taste
In a bowl, add your tomato quarters, finely chopped red onion, olive oil, s&p
Mix together and put off to the side.
Let's begin boarding!
Begin with approximately a 13" paddle board.
Step 1: Place a variety of small bowls on your board and your bell pepper bowl. A build your own taco and tortilla board involves more bowls than your traditional charcuterie board as the taco board is made up mainly of food toppings. The toppings for this board required 6 small bowls. If you choose to not scoop out an asda pepper then you will require 7 bowls.
Step 2: Place sprigs of cilantro and your cherry tomatoes in the open space.
Step 3: Add lime quarters and a jalapeno pepper among the tomatoes.
Step 4: Using my berries colander, I filled it with shredded iceberg lettuce.
Step 5: Fill a small bowl with your Mexican corn and sprinkle paprika on top.
Step 6: In another small bowl add your tomato and red onion toppings.
Step 7: A small bowl with salsa and top with two cherry tomato quarters and a small bowl with guacamole and top with a avocado slice and cilantro!
Step 8: Fill a small bowl with your black bean topping.
Step 9: Last, fill your asda pepper with the diced peppers and place the top of the pepper as a decorative touch!
Step 10: In your side bowl add your beef taco mix.
Step 11: Top off with shredded cheese on the iceberg lettuce and beef.
Step 12: Garnish around your board with cilantro sprigs.
